Unity: Build a customized start/applications menu or maybe use a dock application?

Hi:

 

I’m starting to work more and more with a Windows 10 guest on a Windows 10 host.  I’m using Unity mode.

 

Is there any way to do any of the following:

 

1) Customize the start/application menu?  I don’t need every application that is showing up the current menu.  I just want to have specific applications and a shortcuts to the shell:AppsFolder and ms-settings: .

 

2) Does anyone know of a Windows dock (RocketDock, ObjectDock, etc) that will work in Unity mode? I’ve tried a couple and none of them will appear in a window on the host when launched and set to not hide.
